Oatmeal Raisin Scones

I’ve learned to like scones in recent years. This version not only tastes great, but it is healthy too.

  • 2 cups (240 g) whole wheat pastry flour
  • 3 tablespoons (45 g) brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup (112 g) unsalted butter, chilled
  • 1½ cups (120 g) rolled oats
  • ½ cup (75 g) raisins
  • 1 cup (235 ml) buttermilk
  • 2 tablespoons cinnamon
  • 2 tablespoons (26 g) sugar
Preheat the oven to 375°F (190°C, gas mark 5). Combine flour, brown sugar, baking powder, and baking soda. Cut in butter until the mixture resembles coarse crumbs. Stir in oats and raisins. Add the buttermilk and mix with a fork until dough forms a ball. Turn out on lightly floured board and knead 6 to 8 minutes. Pat dough into ½-inch (1 cm) thickness. Cut 8 to 10 rounds or wedges and place them on ungreased baking sheet. Sprinkle with sugar and cinnamon. Bake 20 to 25 minutes.
Yield: 10 servings
